Or were they replaced by Lee Enfields? I'm asking because I'm simply curious.

The Italians would have been using a very eclectic mix of weapons, from their own across the range of allied, and even some German. I suspect they would have been a nightmare logistically, and efforts would have been made to expand the Allied issues. Certainly, units like the Folgore would have been Allied weapons across the board, once their loyalty had been accepted.

Admittedly, I was mainly interested in what the Folgores used when they were fighting alongside the British in Impasse.

In 'Breakthrough', it was mentioned that Italian weaponry as well as German was sent to Spain to help equip it's Army. Would that included Carcanos?
